Iritis- How Do You Get It

vegan spinach omelette with mushrooms

This is one of the many ways we can develop a tortilla vegan (no animal ingredients, in this case without eggs). It is a variation of a recipe of my colleagues and Mary Eu (Eu Libre).

need:
- Several handfuls of spinach 1 bag fresh or frozen spinach (in this case one that is used in small blocks)
- rolled mushrooms (fresh or canned)
- salt
- tempura flour (could also be used chickpea flour, rice or wheat, but in this case the tempura gives a special touch
- water
- garlic powder (or could be normal)
- olive oil

We
to heat a little oil and add (in If going to use frozen spinach) several blocks of spinach (as we want to make big omelet)
What do we leave, stirring so it does not hit us and within minutes we will have thawed. We added a tablespoon of garlic powder and some salt and stir.

In a bowl mix the tempura flour with a little water until we left a paste similar to the egg.
