The outbreak grelo turnip is the end of which the flowers appear. His appearance is that of a stem more or less thick (the thickness can reach thumb hand) of leaving some leaves and in the end, the flowers.

In Spain, the largest producer and consumer of turnip is Galicia. Used to cook caldo gallego and other dishes, like pork with turnip tops, which is typical of the Carnival, when the turnip greens are in season.

Some people confuse grelo and turnip greens. Both products are turnip greens, turnip greens but are collected at the time immediately prior to flowering when the buds appear (known as "turnip greens" in Galician) and turnip greens are the same leaves before this phase (from October-November).

This is the ultimate recipe contest winner conducting the Radio Galega that as I have told in previous posts has simple recipes and it works and which formed part of the jury . This time the lucky one was Pepe, San Miguel de Sarandon (Vedra) who participated with turnip greens omelette pan made in a traditional way as we all know the tortilla.

hard for me to stay true to a recipe I have sought to transform it a bit and although I have observed exactly the ingredients (I've only fallen a bit quantities) I have strayed in the development and the result has been that you will see below. I hope that Pepe will not bother by these changes and from here take the opportunity to thank you for such a great recipe.




Ingredients:
  • 400g cooked turnip greens (best if cooked leftovers)
  • tacos 150g of ham (the Iberian better)
  • 10 eggs

Line a baking tray with greaseproof paper and pour the mix above ...


introduce a preheated oven at 180 º C about 10 minutes or until the egg is studded. Retired and rolled over on another paper and removed the covering. Wound on themselves, garnish with crispy ham and serve.



To prepare the crispy ham, put two thin slices on a plate lined with paper towels, I covered with more paper and place another container on top by weight. Introduced in the microwave for 2 or 3 minutes until it hardens.
